Capilla del Señor: Roots, Fire & Fine Dining

In the peaceful rural setting of Capilla del Señor, just over an hour from Buenos Aires, lies La Comarca, the private estate of Pablo Rivero—owner of the acclaimed Don Julio steakhouse. Unknown to most, this land is the beating heart of the restaurant: where its philosophy is born, where its ingredients are grown, and where Argentine fire is honored in its purest, most ancestral form.

Usually closed to the public, La Comarca offers a privileged window into the soul of Don Julio. The estate features organic gardens, free-range animals, native trees, and a landscape shaped by time, care, and intention. Here, every ingredient is cultivated with purpose, and every corner reflects the values that have placed Don Julio among the world’s top gastronomic experiences.

This is an invitation-only experience, curated in direct collaboration with Pablo Rivero. Over the course of a day, a select group of guests gains access to this sacred space for a full immersion into rural life. Lunch is served outdoors, prepared with ingredients sourced directly from the estate. Guests stroll through the gardens, connect with the land, and share conversations with Pablo or his renowned chef, Guido Tassi—who bring each dish to life through stories of origin, technique, and philosophy.

After the tour of La Comarca, the experience concludes with a reservation at the exclusive cellar of Don Julio in Buenos Aires: a private dinner for 8 guests, a fireside gathering offering an intimate glimpse into the craft behind one of the country’s most iconic culinary institutions.

Every detail is carefully designed to create a seamless journey—from the soil that gives rise to each product, to the fire that transforms them, to the table where they are shared.
For lovers of cuisine, authenticity, and connection, this is one of the most invaluable experiences Argentina has to offer.
